Meaning "the guardian" in Croatian, Čuvar is the latest family project from legendary wine entrepreneur Sir George Fistonich. Named after the national flower of Croatia to honour the family's heritage, the Iris Collection celebrates classic, regional varieties. Sourced from the historic, ocean-facing slopes of the Čuvar Terraces Vineyard in Bayview—originally planted by Sir George in 1986—this premium drop stands as a faultlessly balanced, vibrant crowd-pleaser where every element sings in perfect unison.
Pristine Coastal Viticulture & Fine Craftsmanship
The unique maritime environment of the Bayview terraces captures intense daytime sunshine while being tempered by cooling Pacific sea breezes, shaping the immaculate energy of the wine. To build complexity while safeguarding the wine's vibrant fruit purity, the winemakers use a meticulous blend of tank and barrel fermentation. Half of the parcel is fermented cold in stainless steel to capture pure varietal freshness, while the remaining portion undergoes fermentation with indigenous yeasts in seasoned French oak barrels followed by extensive lees stirring. This careful method adds stunning weight and physical texture without letting the wood overpower the natural fruit.
