Ancient Terroir & Moonlit Craftsmanship
The fruit is hand-harvested from gnarly, 40-year-old vines planted on an ancient greywacke riverbed in the stony central Wairau Valley. This wild, windswept terroir forces the vines to produce tiny, incredibly concentrated bunches of grapes. In the cellar, the juice is whole-bunch pressed and undergoes a spontaneous wild-yeast fermentation in mostly seasoned French oak barrels. True to the winery's meticulous, artisanal approach, the wine is aged on its full yeast lees for 13 months and stirred by hand only once a month on the full moon to build an exquisite, velvety texture.
