The fruit for this expressive Chardonnay is hand-harvested, chilled overnight, and whole-bunch pressed directly into fine French oak barriques. Allowing the juice to undergo a spontaneous, natural fermentation—followed by 11 months of maturation in barrel with regular yeast lees stirring (bâtonnage)—sculpts its highly sought-after, luxurious palate weight. By capturing the bright daytime sunshine and crisp evening cool of Hawke's Bay, the winemakers introduce a gorgeous textural depth while ensuring the wine finishes with an uplifted, refreshing vibrancy.
