Wild Fermentation & Natural Texture

Rather than using cultured commercial yeasts, the juice is allowed to ferment spontaneously using indigenous "wild" yeasts found in the vineyard. Following fermentation, the wine is matured on its fine yeast lees for several months. This traditional technique gives the wine a lovely, creamy mid-palate weight and a silky texture while protecting its bright, succulent tropical fruit core.
